Bacon, Eggs &... PANCAKES!!!
Cooked up a delicious LCHF breakfast this morning of streaky bacon, organic eggs, balsamic caramelized onions and pancakes! It was so yummy and very filling.
For the pancakes I whisked together: • 1 cup of Almond Flour • 50grams melted butter • 1/4 cup water • 1 Tablespoon Xylitol • 2 organic eggs • 1/4 teaspoon baking powder • 1/4 teaspoon salt
In a nonstick pan I added a knob of butter and cooked the pancakes in 1/3 cup servings over medium heat. Made 6 pancakes.
They cooked just like traditional wheat flour pancakes complete with little bubbles... Only difference came when it was time to flip. A little extra care is needed at this stage.
