LCHF Valentines Chocolates
Well, it's only 10 days until Valentines Day! That's the day you are obliged to demonstrate your affections. I personally prefer to treat my girl year round... She deserves it!
So last night, I whipped up a batch of LCHF Chocolate Treats that make those commercial chocolates look like mudpie.
Take 50gm of 85% dark chocolate. Melt it in a microwave safe bowl in short bursts until liquid.
Take a food safe brush and paint the chocolate inside a silicon chocolate mold then pop in fridge to set. While that sets take 4 strawberries, slice and place in a saucepan with half a cup of boiled water and 1 teaspoon of xylitol. Simmer gently until the strawberry has fully infused the water and the liquid has reduced to around 75ml. Pour through a strainer and allow to cool slightly. While still warm and 3/4 - 1 teaspoon of Gelatine Powder. Stir well to combine, cool completely then half fill your chocolate molds with the Strawberry Jelly.
Place in the fridge for about an hour to setup and while they set take 40gm of softened cream cheese, 1 teaspoon of xylitol and a few drops of strawberry or raspberry extract. Mix well with a fork then fill the remaining chocolate mold with your cream cheese mix. Finish your chocolates with a little more dark chocolate and pop in the fridge overnight.

TIP: These would be delicious with a dash of rose water in both the Jelly & Cream Cheese for a Turkish Delight style chocolate.
