5 Minute Cinnamon Cake
Here's a quick, delicious, satisfying and healthy treat you can have on the table in 5 minutes flat.
Whisk 1 tablespoon of melted butter, 2 tablespoons of double cream and 2 eggs together in a 550ml+ microwave safe container... I use my Pyrex mixing jug.
Next add 1 cup almond meal, 1 dessert spoon of xylitol, 1 teaspoon of baking powder and 1 teaspoon of cinnamon.
Stir well, then microwave for 3 minutes. Invert on to plate to cool for 1 minute, then slice and serve.
We spread a good portion of Grassfed butter, a sprinkle of xylitol and cinnamon mix and then a generous dollop of double cream.
Makes 5-6 portions around 1-2grams of carbs each and loaded with good fats.
