Mocha Mousse or Mint Choc Mousse

We have a new toy in our house and although it was an $80 investment it has quickly become something we use on a daily basis.

These Cream Guns/Cream Chargers are brilliant little gadgets that you can use for so many applications including this very simple and delicious Mocha Mousse or Mint Mousse.

Here's the recipe:

Ingredients

  • 50gm Unsalted Butter
  • 60gm 85% Cocoa Chocolate
  • 250gm Mascarpone Cheese
  • 400ml Pure Cream
  • 1 tablespoon Xylitol
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons of Gelatin Powder
  • 100ml Strong Hot Black Coffee
    OR 100ml Boiling Water (mint version only)
  • 4 drops of Peppermint Oil (mint version only)

Method

  1. In a double boiler melt butter and chocolate then set aside to cool
  2. Dissolve gelatin & Xylitol in coffee OR boiling water + peppermint oil & set aside to cool
  3. Whisk together mascarpone, pure cream and vanilla extract until combined
  4. Add cream mix to chocolate and whisk to combine, then add gelatine liquid and whisk again
  5. Pour mousse mix into Cream Gun, charge as per directions then pipe into 12 individual glasses and place in fridge to set for minimum 4hrs
  6. Serve with whipped cream (use your new cream gun) and a few berries
